Does your salad need a BOOST?  Try this colourful & tasty salad bowl, filled with sweet potatoes, avocado, tofu (chicken or salmon), cherry tomatoes, red onion, kale and quinoa.  It’s  topped with a Lime Yogurt Dressing, sure to leave your taste buds wanting more!

Salad Ingredients:

  • Quinoa (prepare as instructed on box)
  • Kale (wash and chop into bit size pieces)
  • Avocado (slice into long pieces)
  • Cherry Tomatoes (wash and cut in half)
  • Tofu (chicken or salmon) (prepare your protein as needed based on choice)
  • Red onion (slice into long pieces or if prefer a “chunky” look, cut into bite size)
  • Sweet Potato (wash and prepare and cook in oven until soft. Once cooled, slice into long pieces or bit size chunks)

Lime & Yogurt Dressing Ingredients:

  • 1 cup Plain Yogurt
  • 1 cup chopped fresh Cilantro
  • ¼ cup Lime Juice
  • 1 tsp Ground Cumin
  • ¼ cup Olive Oil

*mix in small bowl, until ready to drizzle over salad.  You can make this ahead of time and store in fridge for 2-3 days.
